Cajun Chicken over Rice

Here is a great Cajun chicken over rice meal that can easily be cooked in your Dutch oven. Dutch ovens are a great piece of camping gear to own and are relatively inexpensive when bought from camping gear stores such as REI or Cabela’s.

Cajun Cicken over Rice

1 1/2 lb boneless chicken breast halves; cut into 1" pieces
1/8 teaspoon garlic powder
5 large tomatoes; peeled and chopped
2 large onions; chopped
1 large green pepper; chopped
1/4 cup Worcestershire sauce
1/4 cup soy sauce
2 teaspoon pepper
1 teaspoon dried whole basil
1 teaspoon dried whole marjoram
1 teaspoon dried whole oregano
Hot cooked rice

Sprinkle chicken with garlic powder; set aside. Combine tomatoes and remaining ingredients except rice in a large Dutch oven. Bring to a boil; reduce heat, and simmer 15 minutes. Add chicken, and return to a boil. Cover, reduce heat, and simmer 30 minutes or until tender. Serve over rice. What isn’t being eaten right away can be kept in your Dutch oven for a short time. Yield: 6 servings.
